Litti chokha recipe/Litti chokha in Bihari style
How to make Litti chokha in Bihari style:-
About recipe:-
Litti chokha is very popular dish of Bihar(state of India). Litti chokha is mostly eaten in north region of India and people of all age group from young to old love to eat litti chokha and it is mostly eaten as dinner. In Bihar, people mostly used to eat this delicious dish in winter season at night as a dinner and which is roasted over cow dung cake or wood and coated with the lots of ghee but today we will make litti on appam pan, you can make this in microwave also. Chokha which complement litti is made from the grilled eggplant and boiled potato tastes very yummy. It is very simple to make. So, let's start making this.
Ingredients for making litti chokha:-
Ingredients for litti's atta:-
- Whole wheat flour(atta) - 250 gm
- Carom seeds - 1/2 tbsp
- Cooking oil - 2 tbsp
- Salt - 1/2 tbsp
- Water - 1/2 cup
- Ghee - for shallow frying litti
Ingredients for sattu:-
- Sattu(roasted black chickpea flour) - 150 gm
- Lemon juice - 4 to 5 tbsp
- Mustard oil - 2 tbsp
- Carom seeds - 1 tbsp
- Salt as per taste
- Onion - 1 medium(finely chopped)
- Green chilli - 2 (finely chopped)
- Ginger - 1 inch(finely chopped)
- Garlic - 3 cloves(finely chopped)
- Coriander leaves - 2 tbsp(finely chopped)
Ingredients for chokha:-
- Brinjal(eggplant) - 1 medium
- Tomato - 2 medium
- Onion - 1 medium(finely chopped)
- Potato - 2 medium(boiled)
- Green chilli - 2(finely chopped)
- Ginger - 1 inch(finely chopped)
- Coriander leaves - 1 tbsp(finally chopped)
- Mustard oil - 1 tbsp
- Salt as required
Directions for making litti's atta:-
1. Firstly, take whole wheat flour in a bowl, add carom seeds, cooking oil, salt and mix all the ingredients well.
2. Now, with the help of water knead a soft dough.
3. Cover the bowl and let it rest for 30 minutes.
Directions for making sattu:-
1. First of all, take a bowl and add sattu, finely chopped onion, chopped green chilli, chopped garlic, chopped ginger, crushed carom seeds, chopped coriander leaves, mustard oil, salt, lemon juice and mix all the ingredients very well.
2. If need you can add little bit of water and mix it well.
Directions for making chokha:-
1. First of all wash eggplant , dry it, spread oil on all the area of eggplant and put it on gas stove till it roast from every side.
2. When eggplant will get cooked from all side then peel the cover of eggplant.
3. As same as eggplant roast tomato on gas stove and after cooling, peel of the cover of tomato.
4. Now, boil and peel the cover of potato.
5. Further, in a bowl take boiled potatoes, roasted eggplant, roasted tomato, chopped onion, chopped green chilli, chopped coriander leaves, chopped ginger, mustard oil, salt and mash all ingredients well.
6. Now, your chokha is ready.
Directions for making litti:-
1. Pinch small balls from the dough. Make proper round shape with the help of your palm then dust in wheat flour and flatten them.
1. First of all, heat appam pan and spread ghee in it.
2. After that, place all the littis in the appam pan shape and cook on low flame.
3. When it will get cooked from one side then flip it and cook from the other side if needed spread some ghee on all littis.
4. In this way shallow fry all littis til they turn into golden brown colour as all littis look like.
5. Now, take out all littis and serve hot with chokha and salad and enjoy.

2. When eggplant will get cooked from all side then peel the cover of eggplant.
3. As same as eggplant roast tomato on gas stove and after cooling, peel of the cover of tomato.
4. Now, boil and peel the cover of potato.
5. Further, in a bowl take boiled potatoes, roasted eggplant, roasted tomato, chopped onion, chopped green chilli, chopped coriander leaves, chopped ginger, mustard oil, salt and mash all ingredients well.
6. Now, your chokha is ready.
Directions for making litti:-
1. Pinch small balls from the dough. Make proper round shape with the help of your palm then dust in wheat flour and flatten them.
2. Now, with the help of rolling pin, roll it into about 2 to 3 inches or radius.
3. On the top of rolled dough, place the sattu stuffing in the center.
4. Now, seal the outer edges of dough with the help of your finger tips. In this way make litti from all the dough.
Directions for cooking litti:-1. First of all, heat appam pan and spread ghee in it.
2. After that, place all the littis in the appam pan shape and cook on low flame.
3. When it will get cooked from one side then flip it and cook from the other side if needed spread some ghee on all littis.
4. In this way shallow fry all littis til they turn into golden brown colour as all littis look like.
5. Now, take out all littis and serve hot with chokha and salad and enjoy.
