Tamarind ki khatthi mitthi chutney/ Imli ki khatthi mithi chutney
How to make tamarind/imli ki khatthi mitthi ki chutney:-
About recipe:-
Tamarind ki chutney is very famous in all over India. Imli ki chutney is almost used in sandwich, sevpuri, dahivalle, dahi vada, kachori etc. You can keep this sweet chutney in air tight container for 10 to 15 days.

Ingredients for making chutney:-
- Tamarind - 100 gm
- Sugar - 100 gm
- Black salt - 1/2 tbsp
- Salt - 1/2 tbsp
- Oil - 2 tbsp
- Water - 1 cup
- Red chilli powder - 1/ 4 tbsp
- Cumin seeds - 2 tbsp
Directions for making chutney:-
1. Firstly, heat pan, add cumin seeds and roast for 1 minute on low flame till golden colour.
2. Turn off flame and let it cool the roasted cumin seeds,blend and make a smooth powder.
3. Soak tamarind in half cup water for 5 hours, mash it, squeeze all the pulp and keep aside and add 1/2 cup of water.
4. Heat oil in a pan, add cumin seeds and when it began to crackle then add tamarind pulp.
5. Now, add black salt, roasted cumin seeds powder, red chilli powder, salt and sugar (in the alternative you can add jaggery also) and stir for 1 minute and cook for 3 to 4 minutes for on medium flame.
6. Don't over cook the chutney and keep it mind that the chutney should not be too thick because after cooling it will become more thick.
7. Turn off flame and let it cool chutney and contain in air tight container.
