How to make nimki/namak pare recipe:-

About recipe:-

Nimki is very famous recipe in north India specially in Bihar(state of India). It is taken as a evening snacks with a cup of tea. It is mostly made in every north Indian household. It is made from very simple ingredients which is easily available in your kitchen. It is very simple, quick and easy recipe which takes very less time to cook. You can keep this deep fried nimki in air tight container for long time(10 to 15 days). You can carry nimki in your long train journey for eating as a time pass. It's salty taste and crispiness will surely refresh your mood. people of all age group from young to old love to eat nimki. I remember those days when i was child my mother always used to make nimki and i loved to eat nimki that time very much and now i make nimki for my husband and for my child and they also like to eat nimki. In many state nimki is known by different names like in Maharashtra it is called as 'namak pare' and in Bihar and Jharkhand  it is known as 'nimki'. It is very easy to make. So, let's start the process of making nimki.

Ingredients for making nimki/crispy namak pare:-

  • Whole wheat flour(atta) - 250 gm
  • All purpose flour(maida) - 100 gm
  • Carom seeds(ajwain) - 1 and half tbsp
  • Salt - 1 tbsp (small)
  • Oil - for deep fry
  • Water - 1 cup

Directions for making crispy nimki:-

1. Firstly in a bowl take whole wheat flour(atta), all purpose flour(maida), crushed carom seeds, salt, oil 3 tbsp and mix it well.

2. Now, with the help of water knead a soft dough, cover it and rest for 20 minutes to set.

3. After 20 minutes open the cover and knead dough once again for half  minute.

4. In the next process pinch a big amount of dough and make it in round shape and press it with your fingers.

5. Now, with help of rolling pin roll dough of big round shape on a board, keep it mind that rolled dough should be too thin or too thick.

6. Now, with the help of knife try to cut it into rectangular shape or in rhombus shape. In this way cut all the nimkis from all dough.

7. Heat enough oil in a kadai.

8. To check oil is hot or not put a little bit dough in oil, if it rises up, then your oil is perfectly heated.

9. Now, add little amount of  raw nimki in oil and fry it on medium flame because if you fry it on high flame then it will not get cook from inside.

10. Keep steering in between for more than 2 or 3 times till it gates golden brown in colour. For once it will take 5 to 7 minutes for fry.

11. Now, take it out all the nimkis on kitchen paper towel for absorbing excess oil and let it cool for some time. After cooling you can keep this nimkis in air tight container for long duration.

12. Your nimki is ready to eat. Enjoy nimki with cup of tea.
