Aloo ki sabji/Aloo ki rassedar or gravy wali sabji/Boiled potatato sabji
How to make spicy boiled potato sabji or sabzi:-
Aloo ki sabji is one of my favorite. It is very famous in north region of India. People usually love to eat this recipe in breakfast with puri, roti, chappati and in meal with rice. This mouth watering dish is very delicious, easy, quick and simple to make with the normal ingredients available in your home. It is all time favorite recipes which is made from boiled and diced potatoes. When you are in hurry to serve food to your guest then you can make this aloo ki sabji very easily and quickly and serve this sabji or sabzi with poori. Aloo ki sabji almost made in every north indian home. I personally like this aloo sabji or sabzi very much and i usually make aloo ki sabji for my family members and my family members also like to eat aloo sabji mostly with puffed pooris as breakfast. It is very easy to cook. so, let's start the process of cooking aloo ki sabji.

Ingredients for making aloo ki sabji:-
- Potato ( Aloo) - 500 gm (boiled)
- Onion - 2 medium ( finely chopped)
- Tomato - 1/2 ( finely chopped)
- Cumin seeds - 1 tbsp
- Turmeric powder - 1/2 tbsp
- Garam masala powder - 1/2 tbsp
- Salt as per taste
- Oil - 3 to 4 tbsp
- Ginger - 1 inch
- Garlic - 4 to 6 cloves
- Green chilli - 2 pieces ( finely chopped)
- Coriander leaves - for garnishing ( finely chopped)
- Water - 3 cups
Directions for making aloo ki sabji:-
1. Firstly, wash and boiled potatoes with 2 cups of water in a pressure cooker. Peel the cover of all potato and dice it.
2. In the next process, heat 2 tbsp oil in kadai.
3. Once the oil gets properly heated then add boiled diced potato in kadai and saute the potato for 3 to 4 minutes on medium flame till it gets light golden brown colour.
4. Now, take all fried potatoes out in plate.
5. Further, in a grinder jar take 1 chopped onion, chopped tomato, chopped green chilli, garlic, ginger and make a smooth paste.
6. Now, in the same kadai heat 2 tbsp oil once again.
7. Add cumin seeds in the oil and when it began to crackle then add chopped onion and saute it till it gets golden brown colour.
8. After that, add tomato-onion paste, turmeric powder, salt as per taste, garam masala powder in the kadai and saute on medium flame until oil oozes out from it.
9. Add fried diced potatoes in tomato-onion paste and saute for 1 minute on medium flame.
10. After that, add 1 cup of water in the kadai and simmer on medium flame for 5 minutes.
11. Aloo ki sabji is ready to eat, garnish with chopped coriander leaves and enjoy with pooris.
